  • Alexis Soyer, the forerunner of Isabella Beeton in his popular cookery books, offered his service to advise on cooking for the army engaged in the Crimean war, twice visiting Balaclava where he worked with Florence Nightingale in reorganising the victualling of the hospitals there. In addition to recipes for army life Soyer adds 80 "Bill of fare for London suppers", and menus "for the Needy."
